The Meyer lemon takes its name from its inventor in 1908, Franck Meyer, who discovered it by crossing an orange tree with a lemon tree.
It is more orange in colour than other lemons and has a thinner, almost silky skin. Its juice content is also higher than that of lemons and its pulp is softer and less acidic.
Used by chefs for its juiciness, which is richer and sweeter than other classic lemon. Goes well with oysters.
